Cake pans: buyer’s guide & FAQ

What size cake pans do I need?
Two 9-inch round pans is the classic, versatile default — most layer-cake recipes are written for 8 or 9-inch rounds. Have two of a size so you bake both layers at once (they finish together and match). Add 6-inch pans for small cakes and 10-inch for crowds. Deep (3-inch) pans let you bake tall cakes and slice them into multiple layers. Match the recipe’s specified size for reliable results.
Why anodized aluminum for cake pans?
Anodized aluminum heats quickly and very evenly (few hot spots means level, evenly-browned layers), it’s durable and won’t rust, and the anodized surface is non-reactive so it won’t react with acidic batters. It’s a favorite of professional bakers for exactly these reasons. It’s not nonstick, though, so you grease and/or line the pans — a small trade for superior, even baking.
How do I get cakes to release from the pan cleanly?
Grease the pan, line the bottom with a parchment round, then grease the parchment (and flour the sides if you like) — this nearly guarantees a clean release. Let the cake cool in the pan about 10 minutes so it sets, then run a thin knife around the edge and invert onto a rack. Cooling too long in the pan can make it stick; too little and it’s fragile.
How do I bake flat, level cake layers?
Use good even-heating pans (like anodized aluminum), don’t overfill (about half to two-thirds full), and bake at the right temperature — too hot causes doming. Some bakers wrap damp “cake strips” around the pan to slow the edges and reduce doming, or simply level the tops with a serrated knife after cooling. Even pans and moderate heat do most of the work.
Are anodized aluminum cake pans dishwasher safe?
It’s best to hand-wash them — harsh dishwasher detergents can dull and discolor the anodized finish over time. Warm soapy water and a soft sponge clean them easily since batter releases well from the smooth surface. Dry them promptly. Treated this way, quality anodized pans stay flat and bake evenly for many years of cakes.
