Carbon steel or cast iron — what's the difference?
They’re close cousins: both are seasoned iron-based pans that sear beautifully and last forever. Carbon steel is thinner, lighter, and heats up and responds to temperature changes faster (better for sautéing and eggs), with smoother, flared sides. Cast iron is heavier, retains heat longer (better for long sears and baking), and is cheaper. Carbon steel is the more nimble, chef-favored choice; cast iron is the heat-storage champ.
How do I season a carbon steel pan?
Wash off the factory coating (De Buyer has a beeswax film; scrub it), dry, then heat the pan and rub a very thin layer of high-smoke-point oil over the inside, heating until it smokes and darkens; repeat several times to build a slick, dark patina. Cooking fatty foods (bacon!) helps too. Pre-seasoned pans (Lodge, Yosukata) shorten this. The more you cook, the more nonstick it gets.
Is carbon steel nonstick, and can I cook eggs in it?
