Instant-read or leave-in probe thermometer — which do I need?
Instant-read pens are for spot-checking — you poke, get a fast reading, and pull it out; ideal for steaks, chops, burgers, and chicken. Leave-in probes stay in the meat the whole cook with the display outside the oven or grill, alarming at your target temp — ideal for roasts, turkey, and smoking. Many serious cooks own one of each.
What temperatures should I cook meat to?
Common safe targets: chicken and turkey 165°F; ground meats 160°F; pork and beef/lamb roasts and chops 145°F with a rest; steaks to taste (about 130°F medium-rare, 140°F medium). Pull most meats a few degrees early — they keep cooking while resting (carryover). A good thermometer is the only way to hit these reliably.
How accurate and fast do meat thermometers need to be?
